🍴 Ingredients

  • Sweet pastry: flour, butter, sugar, egg yolk
  • For lemon curd: 4 eggs, 3 egg yolks, 180g sugar, 120ml lemon juice, 200g cold butter, zest of 3 lemons

Make sweet pastry; chill 30 minutes.

Roll out and line a 9-inch fluted tart tin.

Blind bake at 375F for 15 minutes, remove paper and bake 10 more until golden.

Make lemon curd: whisk eggs, yolks, sugar and lemon juice in a pan.

Cook over medium heat, stirring constantly, until very thick.

Remove from heat, add cold butter piece by piece, whisking constantly.

Stir in zest.

Pour into hot tart case.

Bake at 250F for 15-20 minutes until just set.

Cool completely. Serve with creme fraiche.
