🍴 Ingredients

  • 900g full-fat cream cheese, room temp
  • 300g caster sugar
  • 4 large eggs
  • 200ml sour cream
  • 1 tbsp vanilla extract
  • 2 tbsp cornstarch
  • Zest of 1 lemon
  • 200g graham crackers
  • 100g butter, melted
  • 50g sugar

Crush graham crackers and mix with melted butter and sugar.

Press into base of a 9-inch springform pan. Chill 15 minutes.

Beat cream cheese until completely smooth no lumps.

Add sugar and beat 2 minutes. Add eggs one at a time.

Mix in sour cream, vanilla, cornstarch and lemon zest.

Pour over crust. Tap pan to remove air bubbles.

Bake in a water bath at 325F for 55-65 minutes until set with a slight wobble.

Turn oven off, crack door open, leave inside 1 hour.

Chill overnight before removing from pan.
