  • 500g mascarpone cheese
  • 6 egg yolks
  • 150g caster sugar
  • 300ml strong espresso, cooled
  • 2 tbsp dark rum or Marsala
  • 24 savoiardi ladyfingers
  • Unsweetened cocoa powder
  • Dark chocolate for shaving

Whisk egg yolks and sugar until thick, pale and ribbon-like.

Fold mascarpone into egg mixture until completely smooth.

Mix espresso and rum in a shallow bowl.

Briefly dip each ladyfinger in espresso 1 second per side, no more.

Lay soaked ladyfingers in a single layer in your serving dish.

Spread half the mascarpone cream over ladyfingers.

Repeat with remaining ladyfingers and cream.

Dust generously with cocoa powder.

Refrigerate at least 4 hours, ideally overnight. Shave chocolate before serving.
