  • 200g 70% dark chocolate
  • 4 tbsp butter, plus extra for ramekins
  • 4 egg yolks
  • 6 egg whites
  • 3/4 cup sugar, plus extra for dusting
  • 1 tsp vanilla extract
  • Pinch of cream of tartar
  • Powdered sugar to serve

Butter and sugar 6 ramekins carefully; refrigerate.

Melt chocolate and butter together gently over a bain-marie.

Beat egg yolks with half the sugar until pale and thick.

Fold egg yolk mixture into cooled chocolate.

Beat egg whites with cream of tartar to soft peaks.

Gradually add remaining sugar, beating to stiff glossy peaks.

Fold 1/3 of whites into chocolate to lighten.

Gently fold in remaining whites in two additions preserve the air.

Fill ramekins 3/4 full. Run your thumb around the rim (creates the hat).

Bake at 375F for exactly 12 minutes. Serve immediately.
