  • 6 egg whites, room temperature
  • 300g caster sugar
  • 1 tsp white vinegar
  • 1 tsp cornstarch
  • 1 tsp vanilla extract
  • For topping: 400ml double cream, mixed berries, passionfruit

Preheat oven to 250F.

Whisk egg whites until soft peaks form.

Gradually add sugar 1 tbsp at a time, whisking to stiff, glossy peaks.

Fold in vinegar, cornstarch and vanilla.

Spoon onto a parchment-lined baking sheet in a round with slightly raised edges.

Bake for 1.5 hours until crisp outside.

Turn oven off, leave inside with door ajar until completely cool.

Whip cream to soft peaks.

Pile cream in the center.

Top with berries and passionfruit. Serve immediately.
