  • 200g dark 70% chocolate
  • 200g butter, plus extra for ramekins
  • 4 whole eggs
  • 4 egg yolks
  • 200g icing sugar
  • 80g plain flour
  • Good quality vanilla ice cream to serve

Melt chocolate and butter together. Cool slightly.

Whisk whole eggs, yolks and icing sugar until pale and doubled in volume.

Fold egg mixture into chocolate.

Sift in flour and fold gently.

Butter and flour 6 ramekins.

Fill 3/4 full.

Refrigerate at this stage for up to 24 hours.

Bake at 425F for exactly 12 minutes.

Rest 1 minute, then invert onto plates.

Serve immediately with vanilla ice cream.
