  • For choux: 125ml water, 50g butter, 75g flour, 2 eggs
  • For filling: 300ml double cream, 2 tbsp powdered sugar, vanilla
  • For sauce: 150g dark chocolate, 100ml double cream, 1 tbsp butter

Make choux paste: boil water and butter. Add flour, beat vigorously until dough pulls from sides.

Cool briefly. Beat in eggs one at a time until smooth and glossy.

Pipe small mounds onto lined baking sheets.

Bake at 400F for 25-30 minutes until golden and hollow-sounding.

Cool completely on a wire rack.

Whip cream with powdered sugar and vanilla to soft peaks.

Pierce base of each profiterole and pipe in cream.

Make chocolate sauce: heat cream, pour over chopped chocolate, add butter.

Pile profiteroles on a plate and pour warm chocolate sauce over.
