🍴 Ingredients

  • 600ml double cream
  • 4 tbsp caster sugar
  • 2 tsp powdered gelatin
  • 1 vanilla pod
  • Fresh berries or berry coulis to serve

Bloom gelatin in 2 tbsp cold water for 5 minutes.

Heat cream, sugar and vanilla pod over gentle heat until sugar dissolves.

Do not boil.

Remove vanilla pod.

Add bloomed gelatin and stir until fully dissolved.

Pour through a fine sieve into a jug.

Pour into lightly oiled molds or glasses.

Refrigerate for at least 4 hours until set.

Unmold onto plates or serve in glasses with berry coulis.
