  • 250g plain flour
  • 3 eggs
  • 500ml milk
  • 2 tbsp melted butter
  • For sauce: 100g butter, 100g sugar, juice of 3 oranges, 2 lemons, Grand Marnier

Make a smooth crepe batter; rest 30 minutes.

Cook thin crepes in a hot buttered pan.

Make suzette sauce: melt butter and sugar in a wide pan until caramel forms.

Add orange and lemon juice it will bubble vigorously.

Add a splash of Grand Marnier.

Fold crepes into quarters and add to sauce.

Spoon sauce over as they warm.

To flambee: add more Grand Marnier, tip pan to ignite (or use a match).

Let flames die naturally.
