  • 1kg Golden Delicious apples
  • 150g sugar
  • 100g cold butter, cubed
  • Juice of half a lemon
  • 250g all-butter puff pastry

Peel, core and halve the apples.

Make caramel in an ovenproof pan: melt sugar until amber.

Add butter and stir carefully.

Arrange apples tightly in the caramel, curved side down.

Cook on the hob 15 minutes until apples begin to soften and caramelize.

Cover tightly with a disc of puff pastry, tucking edges in.

Bake at 400F for 25-30 minutes until pastry is golden.

Cool 10 minutes then invert carefully onto a serving plate.

Serve warm with creme fraiche or vanilla ice cream.
