  • 150g almond flour
  • 150g powdered sugar
  • 55g aged egg whites
  • 150g caster sugar
  • 37ml water
  • Food coloring
  • For ganache: 150ml cream, 200g chocolate

Sift almond flour and powdered sugar together (tant pour tant).

Age egg whites at room temperature for 24 hours if possible.

Make Italian meringue: cook sugar and water to 244F, pour onto whipped whites.

Fold meringue into almond mixture the macaronage technique until batter flows like lava.

Pipe uniform circles onto parchment.

Bang trays to remove air bubbles. Rest at room temperature 30-60 minutes until a skin forms.

Bake at 300F for 14 minutes.

Make ganache, cool to piping consistency.

Sandwich shells with ganache. Mature in fridge 24 hours before serving.
