🍴 Ingredients

  • 200g Medjool dates, pitted and chopped
  • 1 tsp baking soda
  • 175g self-raising flour
  • 175g light brown sugar
  • 100g butter, softened
  • 3 eggs
  • 1 tsp vanilla
  • For sauce: 300ml double cream, 100g butter, 100g muscovado sugar

Cover dates with boiling water and add baking soda. Let sit 10 min, then mash.

Cream butter and sugar until fluffy.

Beat in eggs and vanilla.

Fold in flour alternately with the date mixture.

Pour into buttered individual pudding molds or a 20cm baking dish.

Bake at 350F for 25-30 minutes until risen and a skewer comes clean.

Make sauce: simmer cream, butter and sugar until thick.

Turn out puddings and pour hot sauce over generously.

Serve immediately with vanilla ice cream or extra cream.
