  • 600ml heavy cream
  • 6 egg yolks
  • 120g caster sugar
  • 2 vanilla pods, scraped
  • Extra sugar for brulee

Heat cream with vanilla pods and seeds until just steaming.

Whisk egg yolks and sugar until combined not too frothy.

Slowly pour hot cream into yolks while whisking constantly.

Strain through a fine sieve. Skim any foam.

Pour into 6 ramekins.

Bake in a water bath at 300F for 30-35 minutes should wobble like jelly.

Chill at least 4 hours or overnight.

When ready to serve, sprinkle thin, even layer of sugar.

Use a blowtorch to caramelize sugar until amber serve immediately.
