  • 200g glutinous rice flour (shiratamako)
  • 200ml water
  • 100g caster sugar
  • Ice cream: matcha, strawberry and mango flavors
  • Cornstarch for dusting
  • Food coloring optional

Scoop ice cream into balls using an ice cream scoop.

Place on lined baking sheet and freeze completely solid, at least 2 hours.

Mix rice flour, sugar and water into a smooth paste.

Cover and microwave on high in 1-minute intervals, stirring each time, until translucent (about 3-4 minutes).

Knead briefly on a cornstarch-dusted surface.

Divide into pieces and roll into thin discs.

Work quickly mochi cools and firms fast.

Place ice cream ball on each disc.

Gather edges and pinch to seal tightly.

Freeze 30 minutes before serving.
