  • 1.5kg beef chuck or short ribs
  • Guajillo, ancho and pasilla dried chilies
  • Cinnamon, cloves, cumin, oregano
  • Corn tortillas
  • Oaxacan cheese or mozzarella
  • White onion, fresh cilantro
  • Lime wedges

Toast and rehydrate dried chilies.

Blend with spices and a little water into a smooth paste.

Marinate beef in chili paste overnight.

Brown beef, add chili sauce and enough water to cover.

Braise at 300F for 3-4 hours until very tender.

Shred beef, reserve the consomme.

Dip tortilla in fat floating on consomme, place in hot pan.

Add cheese and shredded beef.

Fold and cook until crispy and cheese is melted.

Serve with small cup of consomme for dipping.
