  • 400g spaghetti
  • 150g guanciale or pancetta, diced
  • 4 egg yolks
  • 1 whole egg
  • 100g Pecorino Romano, finely grated
  • 100g Parmigiano Reggiano, grated
  • Coarsely ground black pepper
  • Salt for pasta water

Bring a large pot of heavily salted water to boil.

Fry guanciale in a cold pan, slowly rendering fat until crispy.

Whisk egg yolks, whole egg, and cheeses together with lots of black pepper.

Cook spaghetti 2 minutes under al dente. Reserve 1 full cup pasta water.

Remove guanciale pan from heat this is crucial.

Add drained spaghetti directly to the guanciale pan.

Quickly add egg mixture off the heat, tossing vigorously.

Add pasta water splash by splash to create a glossy, creamy sauce.

Serve immediately with extra cheese and black pepper.
