  • 1.5kg beef chuck, cubed
  • 750ml Burgundy wine
  • 200g pearl onions
  • 300g cremini mushrooms
  • 150g bacon lardons
  • 3 carrots, chopped
  • 3 garlic cloves
  • Bouquet garni
  • 2 tbsp tomato paste
  • 2 cups beef stock
  • 3 tbsp flour

👨‍🍳 Instructions

Marinate beef in wine with bouquet garni overnight in refrigerator.

Pat beef dry, season and dredge in flour.

Render bacon lardons in a Dutch oven; remove and set aside.

Brown beef in batches in the bacon fat don't crowd the pan.

Saute carrots and garlic in same pot.

Add tomato paste, the strained wine marinade, and beef stock.

Braise covered at 325F for 2.5 hours until beef is fork-tender.

Separately saute pearl onions and mushrooms in butter until golden.

Add to the braise in the last 30 minutes.

Adjust seasoning and serve over buttered egg noodles.
