  • Jerk marinade: Scotch bonnet peppers, spring onions, garlic, allspice, thyme, cinnamon, soy sauce, brown sugar, orange juice
  • Rice and peas to serve

Blend all jerk marinade ingredients until smooth.

Score chicken deeply and rub marinade into every part, including under the skin.

Marinate overnight minimum 6 hours.

Bring to room temperature before cooking.

Grill over medium heat, lid closed, 30-40 minutes, turning every 10 minutes.

The chicken should be deeply charred and cooked through.
