🍴 Ingredients

  • 6 bone-in beef short ribs
  • 1 bottle red wine
  • 1 carrot, 1 celery, 1 onion (mirepoix)
  • 4 garlic cloves
  • 2 tbsp tomato paste
  • Fresh thyme and rosemary
  • Beef stock
  • Flour for dredging
  • Creamy polenta or mash to serve

Season ribs very generously. Dredge in flour.

Sear in a Dutch oven until deeply browned on all sides.

Remove ribs. Fry mirepoix until caramelized.

Add tomato paste, cook 2 minutes.

Pour in wine and reduce by half.

Add stock and herbs.

Return ribs. They should be 2/3 submerged.

Braise covered at 325F for 3-3.5 hours until meat is falling from bone.

Strain and reduce braising liquid into a rich jus.

Serve over creamy polenta with jus poured over.
