🍴 Ingredients

  • 8 large shrimp, peeled
  • Assorted vegetables: sweet potato, eggplant, green beans, bell pepper
  • For batter: 1 egg, 200ml ice-cold sparkling water, 100g flour
  • Oil for frying
  • For dipping: dashi, mirin, soy sauce, grated daikon

Make batter: very briefly mix egg and ice-cold sparkling water. Add flour.

Mix only 3-4 times lumps are essential.

The batter must be used immediately and kept cold.

Heat oil to 340F.

Dip items in batter and lower into oil gently.

Fry shrimp 2-3 minutes, vegetables 3-4 minutes.

They should be pale golden, not dark.

Drain on a rack, not paper towels.
