🍴 Ingredients

  • 2 tbsp green curry paste
  • 400ml coconut milk
  • 500ml vegetable broth
  • 200g firm tofu, cubed
  • 1 zucchini, sliced
  • 1 bell pepper, sliced
  • 2 kaffir lime leaves
  • 1 lemongrass stalk, bruised
  • Fish sauce to taste
  • Fresh Thai basil
  • Jasmine rice to serve

👨‍🍳 Instructions

Heat oil in a pot, fry curry paste for 2 minutes until fragrant.

Add coconut milk and bring to a simmer.

Pour in vegetable broth, add lemongrass and lime leaves.

Add tofu, zucchini and bell pepper.

Simmer for 15 minutes until vegetables are tender.

Season with fish sauce to taste.

Remove lemongrass. Serve over jasmine rice with fresh Thai basil.
