  • 4 veal shanks, 4cm thick
  • 1 carrot, 1 celery stalk, 1 onion (soffritto)
  • 200ml dry white wine
  • 400g crushed tomatoes
  • 300ml veal or chicken stock
  • Flour for dredging
  • Saffron for risotto
  • For gremolata: lemon zest, parsley, garlic

Dredge veal shanks in flour and brown deeply on all sides.

Remove shanks and make soffritto in same pan.

Add white wine and reduce by half.

Add tomatoes and stock.

Return shanks, standing upright so marrow stays in.

Cover and braise at 325F for 1.5-2 hours until very tender.

Make saffron risotto Milanese.

Make gremolata: mix lemon zest, parsley and garlic.

Serve shanks over risotto.

Spoon gremolata over each shank.
