  • 1kg cherry tomatoes
  • 400g pasta of choice
  • 6 garlic cloves, whole
  • Fresh basil
  • Extra virgin olive oil
  • 1 tsp sugar
  • Red chili flakes
  • Parmigiano to serve

Place cherry tomatoes and garlic in a baking dish.

Drizzle very generously with olive oil.

Add sugar, chili flakes, salt and pepper.

Roast at 300F for 1.5-2 hours until collapsed and jammy.

The tomatoes should be very soft and the oil rich and flavored.

Cook pasta in heavily salted water to al dente.

Crush roasted garlic into the tomatoes.

Add pasta and pasta water, toss together.

Finish with fresh basil and Parmigiano.
