  • 12 large eggs
  • 3 tbsp mayonnaise
  • 1 tsp Dijon mustard
  • 1 tsp white wine vinegar
  • Paprika for garnish
  • Chives, chopped
  • Salt and white pepper

Hard-boil eggs: cover with cold water, bring to boil, turn off heat, wait 10 minutes.

Transfer to ice bath immediately.

Peel eggs carefully and halve lengthways.

Pop yolks into a bowl.

Mash yolks with mayo, Dijon, vinegar, salt and pepper until smooth.

Taste and adjust seasoning.

Pipe or spoon filling back into egg white halves.

Dust with paprika.

Garnish with chives.
