  • 2 zucchini
  • 2 eggplants
  • 4 tomatoes
  • 2 red and yellow bell peppers
  • 2 onions
  • 6 garlic cloves
  • Fresh thyme, rosemary and basil
  • Extra virgin olive oil
  • Salt and pepper

Slice all vegetables into even 5mm rounds.

Saute onions and peppers in olive oil until soft.

Spread as a base layer in a baking dish.

Add garlic and thyme.

Arrange vegetable slices in overlapping concentric circles on top.

Season each layer.

Drizzle with olive oil.

Cover with parchment and bake at 325F for 1 hour.

Remove paper, increase heat to 400F for 15 minutes.

Let rest 10 minutes. Garnish with fresh basil.
