🍴 Ingredients

  • 2 large bunches flat-leaf parsley, very finely chopped
  • 1 small bunch fresh mint, chopped
  • 50g fine bulgur wheat
  • 3 ripe tomatoes, finely diced
  • 4 spring onions, finely sliced
  • Juice of 2 lemons
  • 4 tbsp extra virgin olive oil
  • Salt and pepper

👨‍🍳 Instructions

Soak bulgur wheat in cold water for 15 minutes; drain and squeeze dry.

Very finely chop parsley and mint.

Finely dice tomatoes, draining excess liquid.

Combine parsley, mint, bulgur, tomatoes and spring onions.

Dress generously with lemon juice and olive oil.

Season and toss.

Rest 15 minutes for flavors to meld.

Taste and adjust lemon it should be bright and fresh.

Serve with romaine lettuce leaves for scooping.
