  • 1kg beef chuck, cubed
  • 800ml coconut milk
  • Rendang paste: shallots, garlic, galangal, lemongrass, turmeric, dried chilies
  • Kaffir lime leaves
  • Toasted coconut (kerisik)
  • Palm sugar
  • Salt

Blend rendang paste ingredients until smooth.

Fry paste in oil until very fragrant and darkened, about 10 minutes.

Add beef and stir to coat.

Pour in coconut milk and add lime leaves.

Simmer uncovered, stirring occasionally, for 2-3 hours.

As liquid evaporates, stir more frequently.

Add palm sugar in last 30 minutes.

Continue until sauce is almost dry and oil separates.

Add toasted coconut and fry briefly until beef is dark and caramelized.
