🍴 Ingredients

  • 4 large onions, thinly sliced
  • 150g chickpea flour (besan)
  • 1 tsp cumin seeds
  • 1 tsp coriander powder
  • 1 tsp turmeric
  • 1 tsp chili powder
  • Fresh cilantro
  • 1 tsp salt
  • Water to bind
  • Oil for deep frying

Slice onions very thinly and add to a bowl.

Add all spices and salt. Massage into onions they will release water.

Add chickpea flour and cilantro.

Add just enough water to make a thick batter that holds together.

Heat oil to 350F.

Form rough balls and lower gently into oil.

Fry in batches for 4-5 minutes until deep golden and crispy.

Drain on paper towels.

Serve immediately with mint chutney.
