  • 400g paella rice (Bomba)
  • 400g chicken thighs, bone-in
  • 400g rabbit pieces
  • 200g green beans
  • 1 large tomato, grated
  • 1 tsp saffron, infused in hot water
  • Paprika
  • Rosemary
  • 1.2L chicken stock
  • Olive oil
  • Lemon to serve

Heat olive oil in a wide paella pan over medium-high heat.

Brown chicken and rabbit pieces until golden.

Add green beans and cook 5 minutes.

Add grated tomato and paprika, stir until absorbed.

Add saffron water and stock.

Bring to a boil.

Add rice in a thin, even layer do not stir again.

Cook on high heat 10 minutes, medium 8-10 minutes more.

Create the socarrat: increase heat in last 2 minutes for a crispy bottom.

Rest 5 minutes, serve with lemon wedges.
