  • 150g soft goat cheese
  • 100g walnuts
  • 2 tbsp honey
  • Mixed salad leaves
  • For dressing: sherry vinegar, olive oil, honey, Dijon, salt

Wrap beets individually in foil and roast at 400F for 45-60 minutes until tender.

Cool, peel and slice or quarter.
