  • 1 whole chicken
  • Jasmine rice
  • Fresh ginger
  • Spring onions
  • Garlic
  • Sesame oil
  • For chili sauce: red chilies, ginger, garlic, lime, fish sauce
  • For dark soy dipping sauce

Season chicken cavity with ginger and spring onions.

Bring water to boil with ginger and spring onions.

Lower chicken in, bring back to simmer.

Poach 45-50 minutes until cooked through.

Remove and immediately submerge in ice water for silky skin.

Fry garlic and ginger in chicken fat.

Add rice and toast briefly.

Cook rice in the chicken poaching broth.

Slice chicken and dress with sesame oil.

Serve with rice, cucumber, chili sauce and dark soy.
