  • Shortcrust pastry for one 9-inch tart
  • 200g lardons or diced bacon
  • 4 large eggs
  • 300ml double cream
  • 100ml whole milk
  • 100g Gruyere, grated
  • Pinch of nutmeg
  • Salt and white pepper

Roll out and blind-bake pastry shell at 375F for 15 minutes.

Fry lardons until golden and crispy; drain on paper towels.

Whisk together eggs, cream, milk and seasoning.

Scatter lardons and half the Gruyere in pastry case.

Pour over custard mixture.

Top with remaining Gruyere.

Bake at 350F for 30-35 minutes until just set with a slight wobble.

Cool at least 15 minutes before slicing.
