  • 8 rice paper wrappers
  • 200g cooked shrimp, halved
  • 100g vermicelli noodles, cooked
  • Butter lettuce leaves
  • Fresh mint and cilantro
  • 1 cucumber, julienned
  • 1 mango, julienned
  • 1 avocado, sliced
  • For dipping: hoisin, peanut butter, lime

Prepare all fillings before starting.

Dip one rice paper wrapper in warm water for 5-10 seconds.

Lay flat on a damp surface.

Place lettuce in center, add vermicelli.

Layer shrimp halves on the edge closest to you.

Add mango, cucumber, avocado and herbs.

Fold up the bottom, fold in sides, roll forward firmly.

Arrange shrimp so they show through the wrapper.

Make peanut dipping sauce.

Serve immediately as rice paper dries quickly.
