  • 400g macaroni
  • 2 cooked lobster tails, chopped
  • 4 tbsp butter
  • 4 tbsp flour
  • 600ml whole milk
  • 300ml double cream
  • 200g Gruyere, grated
  • 200g sharp white cheddar, grated
  • 1 tsp Dijon mustard
  • Cayenne and nutmeg
  • Breadcrumb topping

Cook macaroni 2 minutes under al dente; drain.

Make bechamel: melt butter, add flour, stir 2 min.

Gradually add milk and cream, whisking constantly.

Simmer until thick, add mustard, cayenne and nutmeg.

Remove from heat, add most of the cheese.

Fold in pasta and lobster.

Transfer to baking dish, top with remaining cheese and breadcrumbs.
