  • 6 large eggs
  • 500g Russet potatoes, thinly sliced
  • 1 large onion, thinly sliced
  • 150ml olive oil
  • Salt and pepper

Heat olive oil in a 10-inch pan. Add potatoes and onions.

Cook over medium heat until potatoes are very tender about 20 minutes.

Beat eggs well and season generously.

Remove potato mixture with a slotted spoon, add to eggs.

Mix gently and let rest 5 minutes.

Pour off most oil, leaving a thin coating.

Pour in egg and potato mixture; cook gently 5 minutes until edges set.

Place a plate over pan and flip in one confident motion.

Slide back into pan, cook 3 more minutes.

Serve warm or at room temperature.
