🍴 Ingredients

  • 1kg fresh clams
  • 250g smoked bacon lardons
  • 3 large potatoes, diced
  • 1 onion, diced
  • 3 celery stalks, diced
  • 500ml clam juice or fish stock
  • 400ml double cream
  • 2 tbsp flour
  • Fresh thyme and bay leaf
  • Fresh parsley

Steam clams in wine or water until they open; reserve the liquid.

Remove clam meat and roughly chop. Discard shells.

Render bacon in a pot until crispy.

Saute onion and celery in bacon fat until soft.

Add flour and stir 2 minutes.

Add potato, strained clam juice and cream.

Simmer until potatoes are completely tender, about 15 minutes.

Add clam meat and cook 2 more minutes.

Season, add parsley. Serve in sourdough bowls.
