  • Mixed vegetables: potato, carrot, green beans, peas, cauliflower
  • 50g cashews, soaked
  • 200ml coconut milk
  • 2 onions
  • 3 garlic cloves
  • Fresh ginger
  • Korma spice paste: cardamom, cinnamon, coriander, cumin
  • Greek yogurt
  • Fresh cilantro

Blend soaked cashews with coconut milk until smooth.

Fry onions until golden. Add garlic and ginger.

Add korma spices and cook 2 minutes.

Add harder vegetables first potato, carrot, cauliflower.

Pour in cashew cream and enough water to cover.

Simmer 15 minutes.

Add softer vegetables and peas.

Remove from heat, stir in yogurt.

Garnish with cilantro and serve with rice and naan.
