🍴 Ingredients

  • 700g chicken thighs
  • Marinade: yogurt, tandoori spices, ginger, garlic
  • 400g crushed tomatoes
  • 200ml double cream
  • 2 onions, finely diced
  • Garam masala, fenugreek leaves, cardamom
  • 4 tbsp butter
  • Fresh cilantro
  • Naan and basmati to serve

Marinate chicken in tandoori mixture overnight.

Grill or broil chicken until charred. Set aside.

Fry onions in butter until very soft and golden.

Add spices and cook until fragrant.

Add tomatoes and simmer 20 minutes until thick.

Blend sauce until smooth.

Return to heat, add cream and butter.

Add grilled chicken pieces.

Simmer gently 10 minutes.

Add fenugreek leaves and adjust seasoning. Serve with naan.
