🍴 Ingredients

  • 2kg fresh mussels, cleaned and debearded
  • 4 shallots, finely diced
  • 4 garlic cloves, minced
  • 200ml dry white wine
  • 100ml double cream
  • 4 tbsp butter
  • Large bunch of flat parsley, chopped
  • Crusty bread to serve

Discard any mussels that are open and won't close when tapped.

Melt butter in a very large pot over high heat.

Fry shallots and garlic until soft, about 3 minutes.

Add white wine, bring to a boil.

Add all mussels at once and cover tightly.

Steam on high heat for 3-5 minutes, shaking occasionally.

They are ready when shells have opened.

Discard any that remain closed.

Stir in cream and parsley.

Serve immediately with crusty bread.
