  • 8 corn tortillas
  • 400g cooked shredded chicken
  • 500g tomatillos, husked
  • 2 Serrano chilies
  • 1 onion
  • 4 garlic cloves
  • Fresh cilantro
  • Sour cream
  • Queso fresco or Monterey Jack
  • Chicken stock

Roast tomatillos, chilies, onion and garlic under the broiler until charred.

Blend with cilantro and stock into a smooth green sauce.

Season with salt.

Dip each tortilla briefly in warm sauce to soften.

Fill with shredded chicken, fold or roll.

Place seam-side down in a baking dish.

Pour remaining sauce over enchiladas.
