  • 2 whole cooked lobsters
  • 4 tbsp butter
  • 2 shallots
  • 200ml brandy
  • 400ml double cream
  • 2 tbsp Dijon mustard
  • 100g Gruyere, grated
  • Fresh tarragon
  • Salt and cayenne

Halve lobsters lengthways. Remove meat and reserve shells.

Dice lobster meat into large pieces.

Saute shallots in butter until soft.

Add brandy and flambee safely.

Add cream and reduce by half.

Stir in Dijon mustard and tarragon.

Fold in lobster meat.

Fill shells with the mixture.
