  • 3 cups cooked day-old rice
  • 3 eggs
  • 150g frozen peas and carrots
  • 4 garlic cloves, minced
  • 3 spring onions, sliced
  • 3 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 1 tbsp sesame oil
  • White pepper
  • Vegetable oil

Use day-old rice freshly cooked rice will steam instead of fry.

Heat wok until smoking. Add oil.

Fry garlic briefly, then push to side.

Scramble eggs until just set.

Add rice, breaking up any clumps.

Stir-fry on maximum heat the wok hei makes the dish.

Add peas, carrots, soy sauce and oyster sauce.
