🍴 Ingredients

  • 500g raw beets, peeled and grated
  • 300g white cabbage, shredded
  • 2 carrots, grated
  • 1 large onion, diced
  • 400g crushed tomatoes
  • 1.5L beef or vegetable stock
  • 3 tbsp red wine vinegar
  • Fresh dill
  • Sour cream to serve

Saute onion and carrots until soft.

Add grated beets and cook 5 minutes.

Add cabbage and cook a further 5 minutes.

Pour in tomatoes and stock.

Simmer 45 minutes until all vegetables are very tender.

Add red wine vinegar for brightness.

Taste and adjust acidity and seasoning.

Serve with a dollop of sour cream and fresh dill.
