  • 250g finest beef fillet, hand-chopped
  • 1 shallot, finely minced
  • 2 tbsp capers, chopped
  • 2 tbsp cornichons, chopped
  • 1 tsp Dijon mustard
  • Dash of Worcestershire sauce
  • Tabasco to taste
  • 2 egg yolks
  • Fresh parsley
  • Toasted bread to serve

Use only the highest quality beef, frozen briefly to make chopping easier.

Hand-chop beef finely never use a food processor.

Mix shallot, capers, cornichons, mustard, Worcestershire and Tabasco.

Gently fold dressing into the beef do not overwork.
