🍴 Ingredients

  • 1kg Russet potatoes
  • 200g 00 flour, plus extra
  • 2 egg yolks
  • 1 tsp salt
  • Pinch of nutmeg
  • For sauce: 100g butter, fresh sage, Parmigiano

Bake potatoes whole at 400F until very tender.

Scoop flesh and rice or press through a potato ricer immediately.

Spread on a board and let steam dry 2 minutes.

Make a well, add yolks, flour, salt and nutmeg.

Gently bring together do not overwork.

Roll into ropes and cut into 2cm pieces.

Roll each piece over a fork or gnocchi board for texture.

Boil in heavily salted water until they float (1-2 min).

Brown butter with sage until nutty. Toss gnocchi in butter. Serve with Parmigiano.
