🍴 Ingredients

  • 1kg very ripe tomatoes
  • 1 cucumber
  • 1 green bell pepper
  • 1 small red onion
  • 2 garlic cloves
  • 100ml extra virgin olive oil
  • 3 tbsp sherry vinegar
  • 100g stale white bread, soaked in water
  • Salt

Roughly chop all vegetables.

Soak bread in cold water for 5 minutes, squeeze dry.

Blend all ingredients until very smooth.

Add olive oil while blending for an emulsified texture.

Season with sherry vinegar and salt.

Pass through a fine sieve for the smoothest result.

Chill for at least 2 hours.
