  • 500g beef brisket
  • Charred ginger and onion
  • Star anise, cinnamon, cloves, cardamom
  • Fish sauce
  • Rock sugar
  • Rice noodles
  • Rare beef slices
  • Bean sprouts
  • Thai basil, lime, chili, hoisin

Char onion and ginger directly over flame until blackened.

Parboil bones in boiling water 10 minutes; drain and rinse.

Toast whole spices in a dry pan until fragrant.

Simmer bones with charred aromatics and spices for 4-6 hours.

Add brisket in last 2 hours; remove when tender.

Strain broth, season with fish sauce and rock sugar.

Cook rice noodles; drain.

Slice brisket thinly.
