  • 2.5kg bone-in pork shoulder
  • Dry rub: paprika, cumin, brown sugar, garlic powder, cayenne
  • BBQ sauce
  • Brioche buns
  • Vinegar coleslaw
  • Pickles

Apply dry rub generously over the entire pork shoulder. Wrap and refrigerate overnight.

Bring to room temperature.

Smoke at 225F for 6-8 hours until internal temperature reaches 200F.

Alternatively, roast in oven at 300F covered for 6-7 hours.

Rest 1 hour wrapped in foil and towels.

Pull the pork with two forks it should shred effortlessly.

Mix with your favourite BBQ sauce.
