  • 200g white miso paste
  • 400g fresh ramen noodles
  • Pork belly chashu
  • Soft-boiled marinated eggs
  • Nori sheets
  • Bamboo shoots
  • Bean sprouts
  • Corn kernels
  • Green onions
  • Sesame oil
  • Toasted sesame seeds

👨‍🍳 Instructions

Make rich broth by simmering pork bones 8-12 hours (or use quality stock).

Braise pork belly in soy, mirin and sugar for chashu; slice when cold.

Soft-boil eggs 6.5 minutes, marinate in soy and mirin overnight.

Whisk miso with a ladle of hot broth, stir back into pot.

Cook noodles per instructions, drain well.

Warm toppings chashu, bamboo shoots, corn.

Build bowls: noodles first, ladle hot miso broth over.
