🍴 Ingredients

  • 800g center-cut beef tenderloin
  • 500g mushrooms (duxelles)
  • 8 slices prosciutto
  • 500g puff pastry
  • 2 tbsp English mustard
  • 2 egg yolks for wash
  • Fresh thyme
  • Truffle paste (optional)
  • Salt and pepper

👨‍🍳 Instructions

Sear seasoned beef on all sides in screaming hot pan. Brush with mustard. Chill completely.

Make duxelles: blitz mushrooms and cook with thyme until completely dry.

Lay prosciutto on plastic wrap, spread duxelles, roll beef inside tightly. Chill 1 hour.

Roll out puff pastry to fit.

Unwrap beef, place in center. Wrap in pastry, sealing edges with egg wash.

Chill wrapped Wellington 30 minutes.

Score and brush with egg wash. Season pastry.

Bake at 425F for 25 min for medium-rare. Rest 10 minutes.

Slice and serve with red wine jus.
